Mashed Sweet Potatoes

Use all organic ingredients if possible

2 Large Sweet Potatoes

1 inch piece of peeled and diced Ginger

1 Garlic Clove

1/2 teaspoon Thyme

1/2 teaspoon Rosemary

1 tablespoon Coconut Oil

1 tablespoon Maple Syrup

Celtic or Himalayan Salt and Pepper to taste

Roughly chop sweet potatoes and cover with water. Bring to a boil. While the water is heating up peel and chop (a little larger than minced) the ginger. Once chopped add to the potatoes and let boil to soften. Once the potatoes are soft enough to mash (about 15-20min) strain but make sure not to strain the ginger pieces out. We usually do this by using the lid to our pot. Leave a small amount of the water in the bottom (about 2-3 tablespoons worth) Add in coconut oil, garlic, maple syrup, rosemary, thyme, salt and pepper to taste. mash or whip all ingredients together. Enjoy!
